Cookies!

This is the easiest cookie recipe in my arsenal. Five ingredients (one of them is optional) come together with little more than a mixing bowl, a few spoons, and a fork—no stand mixer required!

Peanut Butter-Chocolate Chip Cookies

Ingredients:
1 cup peanut butter (creamy)
1 cup sugar, plus more for rolling
1 tsp. baking powder
1 egg
1/3 cup dairy-free chocolate chips (optional—I use the Enjoy Life or Tropical Source brands, but there are others available in health food stores)

Directions:
Heat your oven to 350 degrees. In a mixing bowl, combine peanut butter, 1 cup sugar, baking powder, and eggs. Mix well with spoon. Gently fold in chocolate chips. Roll cookie batter into balls about 1” in diameter—feel free to make them larger or smaller; just remember to adjust your baking time. Place cookies on a cookie sheet lined with parchment paper or a Silpat. Bake for 10 minutes, then remove from oven and flatten cookies with a fork. Bake an additional 7-8 minutes (more if you like your cookies firmer). Allow to cool on baking sheet about 15 minutes prior to plating. Makes about 18 cookies.

I love this recipe! I have used brown sugar, instead, but basically the same recipe. My DH took these to work and no one knew they were gluten free, very yummy! Super easy!
